Rice Cooker Cilantro Lime Rice

I hope everyone had a wonderful Lenten Season and a Happy Easter! I know I’ve been MIA for quite a while now but I just came back from a long vacation home to visit family. You know how that goes; lots of activities, fun and of course food!
For
those of you who know me, you know I am a rice lover! I just need my carbs.
This recipe is a fast and easy way to give rice a new twist without having to
do much work. Just throw everything into the rice cooker and press start! As
I’ve probably already mentioned before, I enjoy lime and lemon flavors a tad bit
more intense than most so I’ve decreased the amount used in this recipe.
However, feel free to give your rice an extra dose of lime juice if you’re like
me. This Cilantro-Lime Rice was a perfect side to my Honey-Lime-Mustard Slow
Cooker Pork, another fast an easy recipe for a busy day. 2/3 cup Basmati Rice 1. Rinse until the water
runs clear. 1 cup chicken stock 2. Add the rice to the
cooker along with all the seasoning and start the cooker. 3. Once the rice is
cooked, fluff with a rice paddle. 1 tbsp lime juice 1 tbsp butter 1/2 tsp salt 2 tbsps cilantro, chopped 4. Mix the cilantro into
the rice and serve hot.
