(Servings 4)

I’ve never been a fan of okra until I lived in New Orleans and had myself some gumbo. Since then I have learned to enjoy this green seed pod. It has this natural slimy texture that many do not like, but if cooked properly it will not be an issue. Recently, I posted a recipe for Garlicky Bang Bang Shrimp Pasta where okra would be a great vegetable side-dish. This super simple dish is a breeze to whip-up. There is virtually no prep work!!! Sometimes something simple can be so amazing.

A perfect beginner’s dish that will sure to wow your palate. All you have to do is purchase some frozen pre-cut okra, let it slightly defrost, toss in the seasoning and let the oven to the rest! This is probably one of the simplest recipe that I have in my repertoire but so delicious. The oven will crisp up the okra, leaving none of that slimy texture that I know many do not prefer. The seasoning is subtle, but still gives you a tiny kick with every bite.

18 oz okra, frozen and cut and slightly defrosted

1. Toss the okra with the seasoning and oil in a baking dish.

2. Bake at 400F for about 50 minutes until crispy.

3. Stir the okra ever 20 minutes while cooking.

4. Serve hot.
