(Makes about 3 1/2 Cups)

Christmas just doesn’t feel like Christmas without some marshmallows and hot chocolate. I love sitting next to an open fire while sipping some hot chocolate as the snow blankets everything white outside. Instant hot chocolate just doesn’t make the cut. It doesn’t give you that same creamy richness and leaves powdery feel. As for homemade recipes, I find them either too chocolaty or overly sweet. And to top it off, the recipes makes enough for an army! So I decided to make my own version.

It took me a few tries to come up with the perfect balance of chocolate and milk but the effort was worth it. With all the snow days that we’ve been getting here, I’ve been making this a lot. And of course, my little two-year-old enjoys snacking on the mini-marshmallows while helping stir the hot chocolate. With such a simple recipe, there is no reason to not enjoy this more often right?

1/3 cup semi-sweet chocolate morsel

1. Melt the chocolate in a double broiler on medium low heat.

1 tbsp sugar

2. Stir in the sugar until dissolved.

2 cup milk

3. Combine the milk and cream and slowly incorporate into the chocolate.

1 cup heavy cream

1/2 tsp vanilla extract

4. Once the milk and cream is heated through, turn off the heat and mix in the vanilla extract.

Marshmallows (optional)

5. Pour into mugs, top with marshmallows and enjoy.
